What is Cabernet Sauvignon?

Cabernet Sauvignon is one of the world’s most famous grape varietals, known for producing full-bodied, rich wines with deep flavors and great aging potential. Originally from Bordeaux, France, it is now widely grown in regions like California, Chile, Argentina, and Australia.

This grape is a natural cross between Cabernet Franc and Sauvignon Blanc, a chance occurrence in 17th-century Bordeaux.

Cabernet Sauvignon is defined by five key characteristics:
Flavor Profile – Bold dark fruit flavors like black currant, blackberry, and plum, with hints of tobacco, cedar, and spices.
Tannins – Firm tannic structure, giving it depth and aging potential.
Acidity – Moderate acidity balances richness, making it a great food-pairing wine.
Alcohol Content – Typically high, ranging from 13-15%.
Aging Potential – Improves over time, developing complex aromas and flavors.

Whether enjoyed young or aged, Cabernet Sauvignon remains a favorite among wine lovers worldwide.

Joseph Cellars’ flagship wine is our Estate Cabernet Sauvignon. Planted in 1990, our Estate cabernet vineyard consistently produces fruit that exceeds our expectations. Our vineyard is clone 7 planted on St. George rootstock, which is a perfect match for Calistoga’s well drained, volcanic and loamy soil. In addition to our Estate Cabernet we also use our vineyard for our Small Batch Cabernet, Cento Cabernet, Cellar Select Cabernet, and when we have big yields, our 247 and Wild Card. Each of these have a unique flavor profile based on the barrel program or blend the wine maker is using. What is your favorite of our cabernets?
